When it comes to the simple pleasures in life, I am in love with tacos. In fact, if I could only eat one particular type of food for the rest of my life, it would probably be tacos. I mean c'mon!!! They are versatile. You can have them for breakfast, lunch, and dinner. You can put just about any topping on them, not to mention, the heavenly feeling of biting into a well-prepared taco.

When it comes to authentic tacos, you need to have a special touch. You keep it simple, but stack on the flavors. I have always been a fan of the authentic "street tacos." A simple combination of meat, cheese, and spice on a small yet manageable corn tortilla.

For one Missoulian, the art of creating an authentic street taco is his master craft. You may recall seeing Edgar Cisnero last summer at the Farmers Market. Edgar simply calls himself the "Missoula Taco Guy." He moved to Missoula from Texas with a passion for making tacos that goes back generations.

Since the Farmers Market wrapped up, we haven't heard or seen much from "Missoula Taco Guy."

But, in a recent post on Instagram, Edgar announces his return.

After a small break and opportunity for reflection I am happy to say that I’ll be back to making tacos for all you hungry smiling peeps in 2022!

That's RIGHT! Nothing will instantly transport you from a Montana snowbank to the beaches of Mexico like a bite out of an authentic street taco. Missoula Taco Guy will be busting out his breakfast taco tricks at Drum Coffee on South Ave this Saturday (1/8) from 8 am until 2 pm.
